1 sirloin uncut set (about 12 ounces per person) marinade
2 tablespoons teaspoon pepper black
2 tablespoons teaspoon sugar
1 / 2 cup kosher salt
1 / 4 cup chopped garlic
1 / 4 cup smoke liquid
1 / 4 cup soy sauce
Two days before cooking, combine all marinade ingredients.
Put refrigerate overnight.
Place the beef ribs on rack in large saucepan.
Cover one side with 1 / 2 of marinade, rub all of that side.
Turn the beef ribs and pour the remaining marinade, and rub it in.
Cover the pan and refrigerate overnight.
To cook, preheat oven to 450 degrees. Bake at temperature for only about 30 minutes to take out the meat. Turn oven to 250 degrees down, cook for about 2 hours until a meat thermometer reads 120 degrees (saignant.

3 pounds boneless chuck roast beef, cut into 1 inch cubes
2 tablespoons oil Olive
3 cloves garlic, minced
3 tablespoons chili powder
2 teaspoons ground cumin
3 tablespoons all-purpose flour
1 tablespoon dried oregano
2 (14 oz) cans beef broth, divided
1 teaspoon salt
1 / 4 c. teaspoon black pepper
In a large skillet, heat olive oil over medium-high heat. Add beef cubes in and fry for 2 minutes. Reduce heat to medium and add garlic.
Meanwhile, in a small bowl, combine chili powder, cumin and flour. Sprinkle the spices over the meat and stir until all the beef is well coated with spices. Crumble the oregano over the meat and pour 1 1 / 2 cans of beef broth.
Add salt and pepper black. Stir in chili thoroughly and bring to boil. Reduce heat to low, cover partially and simmer chili for 90 minutes.
Pour in the rest of beef broth and simmer for 30 minutes, until meat is fork tender and falls apart easily.
Remove from heat and let cool. Cover and refrigerate to allow flavors to blend.

1 / 2 solid cake yeast or 1 envelope active dry yeast
1 / 2 cup warm water
2 cups milk
1 / 2 cup sugar
2 quarts all-purpose flour
2 tablespoons tablespoons melted butter
2 eggs integers
2 tsp salt
Soften yeast in lukewarm water with a teaspoon of sugar. Scald milk; cool. Add yeast, sugar and flour enough to make medium dough. Beat vigorously. Let stand until light and fluffy.
Add melted butter (which has been cooled), eggs and salt. Beat well.
Add enough flour to form a soft dough. Sprinkle small amount flour on the counter and let dough rest.
